The wines of Domaine Arnoux lachaux are not sold by the case. They can, however, be found on the wine list of many fine establishments such as Chez Panisse. Domaine Arnoux lachaux is a beautiful family winery located in the prestigious Côte d’Or, between Beaune (south) and Dijon (north). The family represents the seventh generation of winegrowers and has owned vineyards for more than two centuries.

We are a family estate of five generations, founded in 1860. We cultivate 15 hectares of vines in the heart of Nuits-Saint-Georges, on clay-limestone hillsides. In 1990, we started biodynamic farming and became certified in 2006. At this time, we stopped all use of herbicides, insecticides, and pesticides on our soils. To date, the estate consists of 15 hectares which produce 4 appellations: Nuits Saint Georges 1er cru “Les Vaucrains” (9 ha), Nuits Saint Georges 1er cru “La Richemone” (2 ha), Vosne Romanée Village “Les Genevrières” (2 ha) and Auxey Duresses village (2 ha).

The vineyard is planted with Chardonnay for white wines and Pinot Noir for red wines. Our approach to winemaking has been guided by analysis and observation over many years: manual harvest, plot-by-plot vinification, ageing in oak barrels for roughly 17 months on average. In the winery, we endeavour to handle the wines as little as possible and favour natural techniques such as indigenous yeasts and gravity in vinification. Pouilly-Fuissé, or simply Fuissé, is a white wine made from Chardonnay grapes grown in the Mâconnais district of Burgundy. The AOC was created in 1936. Its vineyards are located on slopes around the villages of Chaintré, Fuissé, and Solutré-Pouilly, which are all at elevations ranging from 200 to 320 metres (660 to 1,050 ft). There are 12 Premier Cru located within the Pouilly-Fuissé AOC; however, these can only be used on their label if used with specific vineyards designated by the INAO. The grapes were harvested in two parcels of the hill of Vosne. Each parcel was taken to its climatic optimum. The goal was far north, with great maturity and high acids. The yields were low enough to ensure a good concentration. This wine belongs to the Centre de recherche et d’expérimentation sur l’élevage (CREA) research program on lees ageing wines.

This red wine is a blend of two of the key varieties in Burgundy: Pinot Noir and Chardonnay. The grapes for this cuvee are handpicked and then brought to the cellar. After a light pressing, the juice goes through static racking with no temperature control. During this process, the sugar in the grape juice begins to ferment and turns into alcohol. At some point before fermentation is complete, we add back some of the wine that has already gone through fermentation to give it a little body and depth of flavour.

The best things come in threes: the Three Tenors, the Three Stooges, and a three-day weekend. Ok, that may be more than just three items — but it’s a useful guideline, nonetheless. So when thinking about Burgundy, which comes in three main colours of wine, try sticking to this rule: for the freshest flavour, drink white before red before rosé. Domaine Arnoux Lachaux is a wine producer in Vosne Romanée. The family has been cultivating vines in their region since the 18th century, but they have only taken care of their vineyard since 1901.
